Buffalo Chicken Dip

​OK - so this isn't the regular beige food for my boys, but anything Buffalo Chicken flavored is "boy food".

I personally am not a huge fan of wings, so this gives them that kind of flavor in the form of a yummy dip to eat while watching the UGA game.

This recipe is incredibly easy, and makes a lot of food. Which is good because in case you haven't heard - teenaged boys eat a lot.  I'm lucky I can scoop out a little for myself before they claim it for themselves.

Buffalo Chicken Dip
Ready in 35 minutes with only 6 ingredients

INGREDIENTS:
  • 2 - 8 ounce packages of cream cheese
  • 1 Cup ranch dressing
  • 3/4 Cup of hot sauce
  • 10 ounces of pulled chicken (I use a rotisserie chicken and then weigh it - it ends up being about 2/3 of the white meat from a standard rotisserie chicken)
  • shredded cheddar to taste
  • Diced green onions
  • scoops / fritos/ bread to serve

PREPARATION:

1.  Preheat the oven to 350F.
2.  Using a hand mixer, beat the 2 cream cheeses, ranch dressing and hot sauce together in a bowl.
3.  Fold in the shredded chicken.
4.  Use a spatula to spread into a pie plate that is sprayed with Pam.
5.  Bake at 350F for 15 minutes
6.  Add shredded cheddar on top, and bake for an additional 10 minutes.
7.  Remove from oven, and sprinkle the top with  diced green onions.
8.  Serve hot with scoops, fritos, or bread.
