Trader Joe's Pesto Chicken Bake

This is another super easy weeknight meal that everybody loves. AND it is all at Trader Joe's - so not only is it easy, but it is also affordable. In full disclosure, this one takes a little bit longer than the 30 minutes of my typical weeknight meals by 5-10 minutes, but the time is in the oven and not for prep. The recipe I found online was a little too cheesy and a little bland, so I have added red pepper flakes and halved the cheese in my version. I sliced the leftover chicken and used it on my salad for the lunch the next day, and it was great. Enjoy!
Pesto Chicken Bake
 
(an easy Trader Joe's Recipe)

INGREDIENTS:
  • 1 package of Trader Joe’s Pesto Chicken
  • 1 Tbsp olive oil
  • 1 Cup cherry tomatoes
  • ½ to 1 Cup Mozzarella pearls (to taste, or can also substitute mozzarella slices)
  • Balsamic vinegar
  • Arugula
  • Salt & pepper to taste
  • Red pepper flakes, to taste
  • Parmesan cheese, grated
  • one package of pasta (I chose spaghetti)
 
PREPARATION:
1.  Preheat oven to 350 F.

2.  Add pesto chicken in one layer to a greased baking dish.

3.  Add mozzarella, tomatoes, and red pepper to taste and bake for 30 - 35 minutes, until done.

4.  Lightly toss the arugula with olive oil, and salt & pepper.

5. Cook the pasta according the the package directions.

6.  When chicken is done, plate with pasta. Top the pasta with a handful of the arugula, then the chicken, and top with a drizzle of balsamic.
 

Trader Joe's Lobster Pasta Recipe

I love a quick and easy Trader Joe's recipe. Make it a recipe that also involves lobster and I'm in.  Tell be that it's already gone viral on the internet and now I have to make it. And it was sooo good. If you get the pasta started while you cook the shrimp, the whole recipe will take you 20 minutes. That is a huge win at the end of the day.
Trader Joe's Lobster Pasta Recipe

INGREDIENTS:
16 oz container of Trader Joe's Lobster Bisque
16 oz Farfalle Pasta
12 oz Trader Joe's Frozen Langostino Tails 
2 frozen Trader Joe's garlic cubes
2 Tbsp butter
Grated Parmesan cheese, for topping
Fresh parsley as garnish

PREPARATION:

1. Thaw the langostino tails by placing them in a colander and run them under cold water for 3-5 minutes. Then pat them dry and season with salt and pepper to taste.

2. Heat 2 Tb of butter in a skillet, and add in the frozen garlic cubes. Stir to combine.

3. Add in the langostino tails, and cook for 2-3 minutes in the garlic butter sauce.

4. Cook the pasta according the package directions, then drain and return to the pan.

5. Add the lobster bisque to the pasta and stir to combine. Add in the langostinos and garlic butter, and heat through on medium for 1-2 minutes.

6. Serve topped with Parmesan cheese and chopped parsley.

Trader Joe's Orange Chicken and Lettuce Wraps

This is another super easy weeknight meal that everybody loves. AND it is all at Trader Joe's -so it is easy, and affordable. The next day leftovers were even better for my lunch. Enjoy!
Orange Chicken and Lettuce Wraps
(an easy Trader Joe's Recipe)

INGREDIENTS:
  • 1 package of Trader Joe's Manadarin Orange Chicken
  • 1 package of Trade Joe's Miso Crunch Chopped Salad Kit or the Crispy Noodle Salad Kit
  • 1 Package of Little Gem Lettuce
  • 1 package Trader Joe's Organic Fried Rice
  • Green onions for garnish

PREPARATION:
1. Preheat the oven to 400 F.
2. Empty all of the chicken onto a sheet pan and mix with the enclosed sauce. Cook for 20 minutes. 
While the chicken is cooking:
3.  Wash and dry some larger lettuce leaves to use as wraps.
4.  Empty the Salad kit into a bowl and mix well with the enclosed sauce
5. Cook rice as needed for the number of diners you may have
6.  Slice the green onions to use for garnish

7.  When the chicken is done, assemble the wraps by layering the rice, the chicken, then the salad and green onions onto each lettuce leaf.

(Note: If you prefer more structure in your wraps, you can also use a small street taco sized tortilla around each lettuce wrap as well.)

Trader Joe's Sheet Pan Beef and Broccoli

I am always looking for an easy sheet pan recipe, and this one. can easily be halved if you're not feeding an army of hungry teens like I am. The Coconut Aminos sauce from Trader Joe's does not taste like coconut, and instead it gives it a really nice savory umami flavor without being salty like a soy sauce. I really cannot begin to explain how easy this recipe is, especially if you use frozen rice that you already have on hand.  Here is the link to my easy frozen rice recipe - I always have a bunch on hand. I'll link to both recipes in the comments. Enjoy!
Sheet Pan Beef and Broccoli
 
(an easy Trader Joe's Recipe)

INGREDIENTS:
1 lb skirt or flank steak, sliced
2 Cups broccoli florets
1 onion, sliced

 
SAUCE:
  • 1 Cup Trade Joe’s Coconut Aminos sauce (approx. one bottle)
  • 2 tsp garlic powder
  • 2 Tbsp sesame oil
  • 2 Tbsp honey
  • 4 cloves of garlic, minced
  • Green onions, sliced (garnish)
  • Salt and pepper
 
PREPARATION:
1.  Preheat oven to 375 F.

2.  Line sheet pan with parchment paper, then add the beef, broccoli, and onions to the sheet pan, all mixed together.

3.  Mix the sauce, add it to the sheet pan and mix to make sure everything is coated.

4.  Bake for 30-35 minutes.

5.  Serve on top of rice, top with sliced green onions and sesame seeds.

Trader Joe's Spicy Baked Dumplings

This recipe could not be easier on a weeknight, and we all LOVED it!  Plus, you can get everything you need at Trader Joe's so it is easy, and affordable.  You can control the spice level with the chili crunch at the end.  Enjoy!
Spicy Baked Dumplings
 
(an easy Trader Joe's Recipe)

INGREDIENTS:
  • 3 Tbs Trader Joe’s Soyaki
  • 1 Cup Trader Joe’s Thai Style Red Curry Sauce
  • ½ can coconut cream (or cocnut milk)
  • 1 Tbsp garlic, minced
  • ½ Cup water
  • 2 dozen potstickers (approx. 1 pkg of Trader Joe’s Chicken Gyoza Potstickers)
  • 2 T cilantro, chopped
  • 2 Tbsp green onion, chopped
  • Frozen Trade Joe’s Jasmine rice
  • Chili onion crunch (topping)
 
PREPARATION:
1.  Preheat oven to 400 F

2.  Mix the first 5 ingredients together in a separate bowl.

3.  Place all of the potstickers in a baking dish, and then pour the sauce over the top. Toss to coat well.

4.  Cover with foil and back for 30 – 40 minutes.

5.  Top with cilantro, green onions, and chili onion crunch to taste.

6.  Serve over the Jasmine rice.

    It doesn't matter how successful you are or how long your day is - there is only one question when you get home: what's for dinner? That is why I am always on the lookout for recipes that won't take more that 30 minutes to prepare, that are flavorful, and that (almost) everyone will eat.
