Sheet Pan Shawarma

This is technically another easy weeknight  Trader Joe's recipe. If you have a stash of frozen rice (which I explain the advantages of and how to store here) or Trader Joe's frozen rice, then you can keep this recipe to a solid 30 minutes. This meal is flavorful and the cucumbers and feta give it a crisp, fresh feeling. You could easily add a small arugula salad on the side for a little more healthy greens. Enjoy!
Sheet Pan Shawarma

INGREDIENTS:
  • 1 pkg of Trader Joe’s Shawarma Chicken Thighs
  • 3 cups of rice, or Trader Joe’s Frozen Jasmine Rice
  • 4 small cucumbers, diced
  • 2 ounces feta cheese, crumbled
  • 1/2 bottle Trader Joe’s Green Goddess Dressing
  • Olive oil, for drizzling

PREPARATION:
Step 1:
Preheat Oven to 400 F.

Step 2:
Cook rice according to package instructions. I prefer to use the rice cooker, but you could also use Trader Joe’s frozen Jasmine Rice.

Step 3:
Line a large sheet pan with parchment paper. Add the shawarma chicken to one side, and the cooked rice to the other side. Drizzle the rice with olive oil and toss to coat it all evenly. (Note: Spread the rice into as thin a layer as possible to ensure it crisps quicker.)

Step 4:
Bake the tray for 25 minutes, until the chicken is fully cooked (165 F). If the rice isn’t quite crispy, then remove the chicken from the tray and cover on a plate. Put the tray with the rice back in the oven for 5-10 minutes so it is crispy around the edges.

Step 5:
Slice or chop the chicken. Plate the rice with the chicken on top, along with diced cucumbers, Green Goddess Dressing, and topped with crumbled feta.

Sheet Pan Chicken Pitas

I am a big fan of sheet pan dinners, especially when they cut down on the number of dirty dishes I need to clean up after dinner. Sometimes a few extra minutes in the beginning helps to make the cleanup take less time. And so while this recipe will take a little bit more time than the usual 30 minutes, it is mostly just time to allow the chicken to marinate. The actual cooking and serving is a cinch. And this Mediterranean inspired meal is flavorful, supplies a lot of healthy vegetables, and is ultimately really easy. Enjoy!
Sheet Pan Chicken Pitas
INGREDIENTS:
Chicken:
  • 1 lb chicken breasts, cut into thin strips
  • 4 cloves garlic, minced
  • 1 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 tsp cumin
  • 1tsp smoked paprika
  • 1 tsp kosher salt
  •  ½ tsp curry powder
  • Salt & pepper to taste
Peppers:
  • 2 red bell peppers, sliced
  • Olive oil
  • Salt & pepper to taste  
Other:
  • 1 small cucumber, diced
  • ½ red onion, diced
  • ½ Cup kalamata olives, sliced
  • ½ cup feta cheese, crumbled
  • 6 pieces of a flatbread of choice (pita, naan) - I keep Trader Joe's frozen Naan on hand
  • Tzatziki (store bought or home made - recipe at the end*) 

PREPARATION:
Step 1:
Preheat the oven to 425. Mix the chicken with all of the chicken ingredients in a bowl.
​Marinate for 20-30 minutes.

Step 2:
Add the peppers to the sheet pan and toss with olive oil, and salt and pepper to taste. Bake for 20 minutes.

Step 3:
Stir the peppers to distribute the marinade, then move to one side of the sheet pan. Place the chicken on the other side of the sheet pan. Bake for another 10 minutes.

Step 4:
Set out the chicken, peppers, sauce,
Tzatziki, and toppings and allow everyone to build their own pita.

EXTRA:
Recipe for Homemade Tzatziki:

INGREDIENTS:

  • ¾ Cup Greek Yogurt (full fat)
  • ½ Cup grated cucumber
  • 2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1 clove  garlic, minced
  • 1 tsp dill, dried
  •  ½ tsp kosher salt
  • Black pepper to taste

PREPARATION:
Simply mix all ingredients together.

Lemon Pepper Chickpea Skillet

I have a young athlete in my house who is obsessed with protein, and I should be eating more protein as well. This recipe really hits that target and it literally take 8 minutes total to make it. And if you add another protein such as chicken, then this is a home run. This made a lot of food, so my lunch the next day was pretty awesome a well. Enjoy!
Lemon Pepper Chickpea Skillet  (with optional protein)

INGREDIENTS:
  • 2 Tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 tsp lemon pepper seasoning
  • ½ tsp salt
  • ½ tsp mustard powder
  • 2 Tbsp all-purpose flour
  • 1 cup vegetable broth
  • 2, 15 oz cans of chickpeas, drained and rinsed
  • 1 Cup heavy cream
  • ½ Cup grated parmesan
  • ¼ Cup fresh parsley, chopped
  • Lemon slices for serving
  • Salt & pepper to taste

PREPARATION:

Step 1:
Melt the butter in a large saucepan over medium heat. Add the minced garlic, the lemon peppers seasoning, and the salt and the mustard powder. Cook for 1-2 minutes until fragrant.


Step 2:
Stir in the all-purpose flour and stir until combined. Then add in the vegetable broth and bring it to a gentle simmer until the sauce thickens. Then stir in the chickpeas, cover, and let simmer for 5 minutes.

Step 3:
Remove the pan from the heat and stir in the heavy cream, the grated parmesan, and the chopped parsley. Garnish with the lemon wheels and some freshly ground black pepper.

OPTIONAL:
You can easily add to the protein punch of this meal by adding chicken, salmon, or shrimp. In this case, I made my recipe for Grandma's Chicken, and used plan breadcrumbs seasoned with lemon pepper seasoning.
