Creamy Tuscan Chicken

I am always looking for recipes that are easy to make and can incorporate something really good for you - like spinach.  This recipe reminds me of Marry Me Chicken but was even easier. I served it on top of mashed potatoes, but a nice fat noodle like pappardelle or tagliatelle could work too,. And the leftovers were even yummier. Enjoy!
Creamy Tuscan Chicken

Ingredients:
  • 4 chicken breasts
  • 1 tsp Italian seasoning
  • 1tsp Kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3 Tbsp olive oil
  • 3 Tbsp butter
  • 1/2 cup diced yellow onion
  • 5 garlic cloves, minced
  • 1/2 cup sun dried tomatoes - sliced
  • 2 Cups baby spinach
  • 2 Cups heavy cream
  • 1/2 cup freshly grated parmesan cheese


Preparation:
Step 1:
Season the chicken with the Italian seasonings, salt, pepper, garlic and onion powder

Step 2:
Heat olive oil in a skillet and sear the chicken until golden on both sides (about 6 minutes per side) , then add 3 Tbsp of butter and coat the chicken. Remove and set aside.

Step 3:
In that same pad, saute the onion, sun dried tomatoes, and garlic.

Step 4:
Add the spinach, and stir to wilt.
Add in the heavy cream and parmesan, and stir until smooth.

Step 5:
Return the chicken to the pan and spoon the sauce on top.

Step 6:
Serve over tagliatelle noodles, or with mashed potatoes.

French Onion Pasta - a Trader Joe's Recipe

This French Onion Soup Pasta is another really easy weeknight meal for the family. Besides being really easy, it has the bonus of being a one-pan dish which I always appreciate mid-week. And since most of the ingredients can be stored in the pantry or the freezer, this is a great recipe to always have on hand as a back up or an alternative. Enjoy!
.French Onion Pasta - a Trader Joe's Recipe
Note: can be served as is, or with chicken 

INGREDIENTS:
  • 2 pieces of Trader Joe’s French onion soup (frozen)
  • 12-15 pappardelle nests
  • 2 ½ Cups chicken broth
  • ¼ Cup parsley, chopped
  • 1 Tbsp chili oil or chili crunch, for serving

PREPARATION:
Step 1:
Add both containers of French onion soup to the bottom of a large pan or Dutch oven.

Step 2:
Nestle the pappardelle nests around the soup cubes.

Step 3:
Pour the chicken broth over the nests.

Step 4:
Over medium heat, bring the pan to a gentle simmer. Cover and cook for 12-15 minutes, until the pasta is cooked and most of the liquid is absorbed. (note: Stir 1-2 times while cooking to prevent sticking to the pot.)

Step 5:
Scatter fresh parsley and stir to mix. After plating, drizzle with chili oil or chili crunch for a little spice.

​(note: you can easily add some rotisserie chicken if you need to up the protein.)
 

Lemon Pepper Chicken with Asparagus & Rice

This is an awesome one pan, weeknight dinner, but in full disclosure it is NOT a 30 minute meal.
HOWEVER - I am putting it here on the blog because it is SO good and super easy.

The prep only takes 15 minutes max - truly. Then you put it in the oven for 45 minutes.

In the mean time you can go get in time on the Peloton, read a chapter in your book, or help the kids with homework while it’s cooking!  IF you have any leftovers, they are even yummier the next day. Enjoy!
 
Lemon Pepper Chicken with Asparagus and Rice
 
INGREDIENTS:
  • 1 cup uncooked rice (jasmine or basmati)
  • 2 cups chicken broth
  • 1 lb thinly cut chicken breasts
  • 1 bunch of asparagus (trimmed and cut into 2” pieces)
  • 4 cloves of garlic
  • 3 Tbsp Lemon juice (or 1 fresh lemon zested and juiced if  possible)
  • 2 Tbsp butter
  • ½ Cup heavy cream, or half ’n half
  • 1 ½ tsp paprika
  • ½  Cup shredded parmesan for topping
  • Seasonings: 2 Tbsp Italian seasoning, and salt & pepper to taste
 
PREPARATION:
Step 1:
Preheat oven to 375 F.
 
Step 2:
To a 9 x 13 greased casserole dish, add the rice, heavy cream, and chicken broth and stir to mix well.
Add in the garlic, lemon juice, lemon zest, and seasonings to taste.

Step 3:
Sprinkle the top of the chicken with the paprika. Then place the chicken on top of the rice mixture.

Step 4:
Add in the asparagus and butter around the chicken.
 
Step 5:
Cover tightly with aluminum foil and bake for 45 minutes.
 
Step 5:
Remove the foil, sprinkle the chicken with the shredded parmesan and bake for 10 more minutes, uncovered.
