I am a big fan of sheet pan dinners, especially when they cut down on the number of dirty dishes I need to clean up after dinner. Sometimes a few extra minutes in the beginning helps to make the cleanup take less time. And so while this recipe will take a little bit more time than the usual 30 minutes, it is mostly just time to allow the chicken to marinate. The actual cooking and serving is a cinch. And this Mediterranean inspired meal is flavorful, supplies a lot of healthy vegetables, and is ultimately really easy. Enjoy! Sheet Pan Chicken Pitas
INGREDIENTS: Chicken:
PREPARATION: Step 1: Preheat the oven to 425. Mix the chicken with all of the chicken ingredients in a bowl. Marinate for 20-30 minutes. Step 2: Add the peppers to the sheet pan and toss with olive oil, and salt and pepper to taste. Bake for 20 minutes. Step 3: Stir the peppers to distribute the marinade, then move to one side of the sheet pan. Place the chicken on the other side of the sheet pan. Bake for another 10 minutes. Step 4: Set out the chicken, peppers, sauce, Tzatziki, and toppings and allow everyone to build their own pita. EXTRA: Recipe for Homemade Tzatziki: INGREDIENTS:
