Coronation Chicken Salad was originally called "Poulet Reine Elizabeth," and was created to celebrate the coronation of Queen Elizabeth II in 1953 when it was served at a banquet luncheon for 350 of the queen's guests.
For some reason it had a heyday in Britain in the 80s, which is probably when it came onto my radar. And I loved it. So much so that I served it at my Bridesmaid's luncheon before I got married, as well as at my Coronation Viewing Party for King Charles back in 2023. So - in honor of his birthday on November 14th, I thought I'd share my recipe. This is essentially a curried chicken salad with mango chutney. There have been thousands of variations over the decades. Some include sliced grapes, or diced yellow raisins (also called sultanas), or slivered almonds. This recipe with the sliced grapes is the one that I've been using for years. You can serve this on lettuce leaves, as finger sandwiches (as I did at my luncheon), or as a nice overstuffed sandwich. It really just depends on the size of the crowd you are serving, and your desired presentation because it is "Royally" yummy regardless. Coronation Chicken Salad INGREDIENTS:
PREPARATION: Step 1: Pull the meet off the bone of the rotisserie chicken, and dice into bite sized pieces. Step 2: In a large bowl mix together the mayonnaise, sour cream, mango chutney, curry powder, diced red grapes, and lemon juice. Step 3: Fold the diced chicken into the mayonnaise mixture. Then add in the cilantro, salt, and pepper and mix well. Step 4: Plate the chicken salad on Bibb lettuce leaves, on top of a salad, or as a sandwich, and Enjoy! |
