On those days when you don't know what to make for lunch, I encourage you to take stock of what you have on hand. You'd be surprised whaat you can come up with. Today was one of those days. Here is what I had on hand: a large container of pulled rotisserie chicken. I knew I wasn't in the mood for chicken salad, a wrap sandwich, or a salad with chicken on top (all good options, BTW). So after a quick inventory I discovered I had this: I had some Boursin cheese, sun dried tomatoes, orzo, chicken broth, pulled rotisserie chicken, fresh kale, some Italian seasoning and some garlic powder. I used some previous recipes as a starting point for this recipe, which I almost decided to call "Kitchen Sink Lunch for 1" since I was throwing in everything but the kitchen sink. After mixing it all together, I baked it for 20 minutes and it came out perfect. Try it for yourself! I think you'll be surprised. Chicken and Orzo Lunch for 1
INGREDIENTS:
PREPARATION: 1. Preheat oven to 350F 2. In a small Staub (or similar) baking dish, add all of the ingredients, and cover with foil. 3. Bake for 20 minutes, until orzo is tender. 4. Remove the foil, and mix it all together. Add a little more broth if needed to make it creamier. 5. Allow to cool a little, and Enjoy! Comments are closed.
