Thai Chicken Lettuce Wraps

My family loves Thai food, so a recipe that promises to be “Quick & Easy” and Thai-inspired had to have a go at the Delaney Test Kitchen. And this from Katerina at Diethood.com was a huge success that now gets regular requests. The Peanut Sauce was so easy that I’ve made it for other recipes, too.

Thai Chicken Lettuce Wraps
INGREDIENTS:
PEANUT SAUCE:
1/2- cup Hellmann's Carefully Crafted Dressing & Sandwich Spread
1/4- cup Natural Smooth Peanut Butter
1 tablespoon 
Sriracha

CHICKEN:
1
 tablespoon vegetable oil
1 red or orange bell pepper, diced
2 cups cubed or shredded cooked chicken breast  (Hint: use rotisserie chicken!)
3 green onions , chopped
1 cup halved & thinly sliced red onions
4 to 5 basil leaves , cut into thin ribbons 8 butter lettuce leaves
sesame seeds, optional
peanuts
, optional

DIRECTIONS:
1.  In a small bowl, combine Hellmann's Dressing, peanut butter, sriracha and lime juice; mix and stir until thoroughly incorporated. Set aside.
2.  Heat vegetable oil in a wok over medium-high heat.
3. Add diced peppers and cook for 2 minutes, or until tender. 
4.  Add chicken and continue to cook for 1 minute.
5. Stir in green onions; cook for 2 minutes.
6. Remove from heat and stir in red onions, basil and HALF of the prepared peanut sauce.*
7. To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf. Add sesame seeds and peanuts. Drizzle some of the peanut sauce over each prepared wrap. 
8. Serve.
*Store remaining peanut sauce in the refrigerator.
